Crisp layers, syrupy, and utterly irresistible, this delicate banana puri is a treat you won’t forget!

I made this delicate banana puri with love, turning simple ingredients into a melt-in-your-mouth delight. Each bite is crisp, sweet, and perfectly syrupy, making an impressive treat for any occasion. Whether you’re a kitchen beginner or a seasoned baker, this recipe is simple to follow and guaranteed to delight your taste buds!
Ingredients:
2 cups all-purpose flour
Pinch of salt
1 and 1/2 tsp. baking powder
1 tbsp. ghee
1 cup iced water with 1 tsp. lemon juice
Method:
To a deep bowl, add all the dry ingredients and combine well. Add the ghee and mix well. Add the lemon juice into the iced water and mix. Gradually add the iced water into the dry ingredients. Bring the dough into a dough ball and cling wrap it. Leave it in the refrigerator overnight. Remove dough from the refrigerator. Divide dough into 8 dough balls. Roll into 35.6 cm rotis.
For layering:
1 cup melted ghee
1 cup corn flour
Paste:
3 tbsp. all-purpose flour
Cold water
Add water to flour and make a thick paste.
For the syrup:
1 cup sugar
1/2 cup sugar
1 tbsp. rose water
1 tsp. rose essence
In a pot, combine the above ingredients and mix well. Boil until syrup slightly thickens. Set aside.
Method:
Remove dough from the refrigerator an hour before starting the process. Divide dough into 8 dough balls. Roll into paper-thin large rotis
(35 cm).

Place the first roti and smear ghee onto the roti and sprinkle corn flour. Continue until the last roti is placed. Now, gently roll the roti into a large 70 cm roti. Cut out edges. Smear ghee and sprinkle corn flour. Apply paste on the edges. Now, firmly fold this large roti in a swiss roll. Cut into 2 or 3 cm. Take 1 piece and flatten it to 12-13 cm in length. (Do not turn the pieces. Flatten as is). Continue with all the pieces.
Be very patient when frying:
Deep fry. Add vegetable oil to a pot and heat on medium. Test with a piece of the dough. When the dough springs up, the oil is ready.
Using 2 forks. Fry on medium to low heat.
Place 1 piece of the flattened dough in the oil. Allow the banana puri to open very gently with the help of the forks. Fry until lightly golden. Using a slotted spoon to remove from the oil and place on a thick layer of paper towel. Continue the process and leave for absorption of oil. 24 hours will be just fine.
Decor time:
Remove from the paper towel and place on a wire rack. Drizzle the syrup and a good dusting of glitter.

When rolling each piece of dough, gently roll from the top.
