Ingredients:

3 cups self-rising flour
1/2 tsp fine salt
1/4 cup castor sugar
3/4 cup heavy whipping cream
3/4 cup soda water
Raisins are (optional)
Method:
Preheat oven to 200 Celsius
Combine self-rising flour and salt. Whisk the heavy whipping cream and soda water. Using a spatula, gradually add the liquid a little at a time to the dry ingredients and mix. Gather the dough together and transfer it to the floured surface. Gently knead, bringing dough together. Use a cookie cutter and cut out scones and place them on a baking tray, and brush with full-cream milk. Bake for 15 minutes or until slightly golden. Please check in with a toothpick. Transfer to a wire rack and cool.
