Moist and Rich Homemade Carrot Cake

Ingredients:

1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon powder
1/4 tsp. grated nutmeg
1/4 tsp. salt
2 large eggs
1 cup brown sugar
1/2 cup vegetable oil
1 tsp. vanilla essence
1 1/2 cup grated carrots
Method:
Preheat oven to 350°F (175°C).
Grease the loaf pan.
In a bowl, add all the dry ingredients. Add the flour, baking powder, baking soda, cinnamon powder, nutmeg, and salt. Use a whisk and combine well.
In another bowl. Add the eggs, sugar, oil, and vanilla essence. Whisk until well combined. Gradually fold in the grated carrots and chopped pecans.
Gently incorporate the dry ingredients into the wet ingredients, stirring until well combined. Pour batter into loaf pan and spread evenly.
Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
Topping is totally optional.
2 tbsp. cream cheese
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 tsp. vanilla essence
Beat the butter and cream cheese until well combined. Gradually add the powdered sugar. Add the vanilla essence and beat until light and fluffy. Frost the cooled carrot loaf and enjoy.

Once baked, set aside to cool completely!

Once baked, remove the cake from the oven and place it on a wire rack. Allow it to cool completely before slicing or frosting—this step is important, as it gives the cake time to settle and develop its rich texture. Cooling also helps the flavors come together and makes every bite moist, tender, and deeply satisfying. Patience here truly pays off!
