Ingredients for the Flavorful Spice Blend

1 large chicken. Skinned and cut up in pieces. Rinsed and left in a colander, covered.

2 medium onions, diced

3 small tomatoes

Ginger and garlic paste

Curry leaves

2 tablespoons of Kashmiri red chili powder

1 tablespoon turmeric powder

1 tablespoon of garam masala

1 tablespoon of biryani mix

1 tablespoon of coriander powder

  • Cook on medium to low heat and let it cook for 10–12 minutes Slow cooking allows the chicken to become tender and absorb all the flavors.
  • Once the chicken is tender, the curry has thickened, and there is a slight bit of oil on the surface. The curry is ready to be served.
  • Garnish with some freshly chopped coriander.

How do I prepare and marinate chicken?

  1. Select and clean the chicken. Choose bone-in, skinless chicken pieces such as thighs or drumsticks or just the whole chicken for optimal flavor and tenderness, or just the whole chicken. Rinse the chicken pieces under cold water and leave the chicken pieces in a colander.
  2. To marinade the chicken, place the cleaned chicken pieces into the bowl and add spices to the chicken. Add all the dry spices. Use your hands to massage the spices into the chicken, ensuring that each piece is thoroughly coated with the spice mixture. For best results, allow the chicken to marinate for at least 1-2 hours in the refrigerator, or ideally overnight, to allow the flavors to penetrate the meat.
  3. Optional Ingredients: Depending on your preferences, you can also add other ingredients to the marinade, such as yogurt, lemon juice, or vinegar, to tenderize the chicken further and enhance its flavor.
