- Cook on medium to low heat and let it cook for 10–12 minutes Slow cooking allows the chicken to become tender and absorb all the flavors.

How do I prepare and marinate chicken?
How to Make Perfect Durban Chicken Curry.
Select a curry spice blend: The spice combination makes Durban Chicken Curry genuine. Quality Durban curry spice blends have balanced tastes. Try homemade spice combinations to suit your taste. Its important to understand your spices and your spice profile.
Marinade the chicken with spices: Marinate the chicken pieces with all the dry spices and a combination of garlic and ginger paste.
On a stovetop, simmering the curry on low heat for a long time develops flavors and tenderizes the chicken.
Adjust the pungency to your satisfaction. Reduce chili powder or use a mild curry spice combination for a gentler curry. For further pungency, add chili or chili flakes.
The creamy richness of coconut milk is optional. The greatest curry has depth and richness from full-fat coconut milk.
After the chicken is tender, avoid overcooking to avoid toughening it. Coconut milk should be added 30 minutes before serving.
