Mung dal curry is one of those timeless dishes that never fails to bring warmth and nourishment to the table. 2 cups of green mung dal. Rinse well and soak in cold water overnight. Rinse well and cook until tender.
Ingredients:
3 tbsp. of desi ghee
2 tbsp. ginger and garlic paste
2 tbsp. Kashmiri red chili powder
1 tbsp. garam masala
1 tbsp. coriander seed powder
1/2 tsp. turmeric powder
6 medium tomatoes, liquidized
Fine salt
Curry leaves
1 tsp. sugar
Kasuri methi
250 ml fresh cream
Green chilies
Chopped coriander
Method:
To a pot, add the ghee and leave to melt. Cooking on low heat, add the ginger and garlic. Sauté for a minute or two on low heat. Add all the spices and sauté. Now add the liquidized tomatoes and cook on medium heat until the ghee comes to the surface. I will now add the cooked mung dal and mix really well. Add some of the liquids from the cooked mung dal and allow to simmer. Add the sugar, mix, and add the kasuri methi. As the curry thickens, add the fresh cream. Allow the curry to thicken and bring in the green chilies. Reserve a 1/4 cup of the fresh cream for later. Simmer on low until the curry thickens. Drizzle the 1/4 cup of fresh cream and sprinkle some freshly chopped coriander, and enjoy!
