Ingredients.
Vermicelli ( 500g )
Butter (250g)
Butter ghee
Sugar (1cup) or jaggery
Cardamom
Nutmeg
Desiccated coconut
Almonds or nuts of your choice
Boiled water ( 4 cups )
Condensed milk
Method.
In a pot, add the butter and allow it to melt. Add the whole spice to the butter and simmer for a minute or two. Now add the vermicelli and fry on low until slightly golden. Add the desiccated coconut and mix well. Leave to fry for 2 to 3 minutes on low, then add the boiled water and stir gently. Add sugar, mix, and bring to a boil. Now add the condensed milk, stir gently, and just allow it to simmer. Sprinkle some almonds and switch off the heat. The vermicelli will become dry as the vermicelli cools. Serve and enjoy!

- Presentation is key. Start by selecting the perfect serving dish or bowl. Opt for something that complements the colours and textures of your dessert, whether it’s a rustic ceramic bowl for a homemade feel or an elegant glass bowl for a touch of sophistication.
- Garnish with Garnish: Sprinkle your sweet vermicelli dessert with a final flourish of garnishes to add visual appeal and enhance the flavor profile. Slivered almonds, pistachios, or edible rose petals are popular choices that add both texture and colour.
- Serve with Style: Consider the serving style that best suits your dessert. If it’s a warm dessert like payasam/seviyan, serve it in individual bowls with a spoon for easy enjoyment. For chilled desserts like falooda, present them in tall glasses or bowls with long spoons for layer-by-layer indulgence.
- Temperature Matters: Pay attention to the temperature of your dessert. If serving warm, make sure it’s hot enough to be satisfying but not scalding. For chilled desserts, ensure they are properly chilled but not overly frozen, allowing the flavors to shine through.
- Accompany with Accompaniments: Consider serving your sweet vermicelli dessert with complementary accompaniments to enhance the overall experience. A scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of flavor syrup can take your dessert to the next level of indulgence.
- Offer Options: Keep in mind any dietary preferences or restrictions your guests may have, and offer alternative serving options if needed. For example, provide dairy-free alternatives for those who are lactose intolerant or gluten-free options for those with gluten sensitivities.
By paying attention to these details and serving your sweet vermicelli dessert with care and creativity, you’ll ensure that every bite is a delightful experience that leaves your guests craving more.
