- Fresh Ginger and Garlic: A lot of traditional Pakistani and Indian recipes call for freshly prepared ginger and garlic paste. Essentially, it’s just a combination of peeled ginger knobs and a handful of cloves of garlic broken down in a food processor with a little vinegar to help keep these ingredients fresh and some water. Some people also add a little oil for preservation, but this is optional. Nowadays, most South Asian grocery stores (as well as mainstream stores) sell prepared garlic and ginger paste.
