Deliciously Flavourful Vegetable Biryani

A vegetarian biryani is equally as delicious as a non-vegetarian biryani if it is prepared by stacking and cooking on dum. The combination of the veggies and spices results in a mix of flavors and scents that will excite your taste buds in the same way as a biryani that contains meat would.

Basmati rice, vegetables, whole spices, and spice powders are the ingredients that go into making vegetable biryani. The correct biryani masala spice blend is the key to making a biryani that is absolutely irresistible.

Preparation:

  • Rinse and chop vegetables. Keep them ready.
  • Wash and soak lentils for 60 minutes in boiling water.
  • Wash and soak basmati rice for 30 minutes. Too much soaking may also make rice grains mushy.

  • Vegetable oil
  • Butter
  • Green beans
  • Carrots
  • Cabbage
  • Gadra beans
  • Brown lentils
  • Mushrooms
  • Soya chunks
  • Onions
  • Potatoes
  • Green chilies
  • Ginger and garlic paste
  • Curry leaves
  • Bay leaves
  • Cinnamon sticks
  • Star anise
  • Fresh mint leaves
  • Fresh thyme
  • 3 tbsp. Kashmiri red chili powder
  • 1 tbsp. turmeric powder
  • 1 tbsp. biryani spice
  • 1 tbsp. garam masala
  • 1 tbsp. corinder powder

Method:

  • Heat oil in a pot on medium heat.
  • Add all the whole spices to the oil, and let these spices release their oils a wonderful aroma. Now add the sliced onion and allow it to simmer on medium to low heat until the onion is slightly brown. Remove some of the fried onion for sprinkling over the biryani when done. Add the slit chillies and curry leaves and sauté.
  • Now you are ready to add in all the dry ingredients and the ginger and garlic paste. Give this spice a mix on low heat for a minute or two.
  • Add the soya chunks and just sauté for 3 to 4 minutes. Add the soya, the gadra beans, the brown lentils (biryani dhal), and all the veggies to the pot. Giving this curry a mix and cooking on medium heat. I used soft-cooked potatoes for the biryani. So I added the potatoes to the veggies, and I added enough water to allow all the veggies and lentils to cook. Leave it to cook for 10 to 15 minutes.
  • Now add the washed rice. Be mindful of the rice you are using. If you are using basmati rice, which cooks very quickly,
  • Last but not least, add the green for more aroma and flavor.
