Today, I’m sharing one of my all-time favorites—a fluffy and moist classic sponge cake that’s so easy to make. Whether you’re celebrating a special moment or just craving something sweet with your tea, this timeless recipe is one you’ll turn to again and again. I’ve made this cake more times than I can count, and every time, it never fails to impress. Let’s bake joy into every slice—together.

Simple ingredients for a fluffy, moist cake!

  • 2 1/2 cups self-rising flour
  • 1 1/2 cups of castor sugar
  • 1 cup softened butter
  • 1 cup oil
  • 6 large eggs
  • 10g vanilla essence
  • 250 ml sour cream
    Method:
Preheat oven to 180 Celsius (350°F).
Grease your cake pans.
Whisk butter, oil, and sugar until light and fluffy. Add 1 egg at a time, whisk, and continue with the rest of the eggs. Now add the vanilla essence and whisk, and add the sour cream and combine well. Add the self-rising flour, whisking a little at a time, until well combined. Divide batter into prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center of each cake comes out clean. Let the cake cool in the pans for 15 minutes, then transfer them to a wire rack to cool completely.
Note:
Make sure the cakes have cooled completely before icing them.
