  • 2 cups milk

  • 1 cup desicated coconut

  • 1 tsp. baking powder
  • 1 tsp. vanilla essence
  • 4 eggs ( room temperature)

Method

Set the oven to 180 Celsius (350 Fahrenheit). Grease an ovenproof dish or oven tray.

Whisk eggs, butter, and vanilla essence. Add the sugar and baking powder and whisk. Now add the desiccated coconut and flour, gradually adding the milk. Continue to whisk for a minute. Give the mixture a stir with a wooden spoon and pour into a greased baking tray. Bake for 35 minutes. When you put a knife into the centre, it must come out clean.
