In recent years, this comfort food has become popular globally because of its appeal as an ayurvedic meal and yogic meal, one that is not just tasty but supposedly good for rebuilding your gut health too. Kitchree can be both basic and elaborate in its use of spice and flavor sensations. For me, kitchree was often braised with sliced onions, dried red chilies, and mustard seeds. Similarly, the rice can vary from grainy to soft.  I am not a fan of soft-cooked rice, but when it comes to kitchree, it is an exception I make gladly. I like the soft, mash-like, or slightly dry texture.  The variation differs depending on the curries that will be served. I have also opted for the most basic form in this recipe: easy to make and toddler-friendly. The fewer things to pick out, the better.

Ingredients

  • 1 cup pea dhal
  • 2 cups of basmati rice
  • Vegetable oil
  • 1 large onion
  • Red dry chilies
  • Turmeric powder
  • Mustard seeds
  • Salt
  • Curry leaves

Method

Place the rice and dhal separately. Rinse well and leave to soak for an hour. In a pot, add oil and warm. Once the oil has heated up well, add the mustard seeds, leave them to splutter, and immerse their flavouring in the oil. In go the dry red chilies, sliced onions, and some curry leaves, and mix. Now add the required amount of salt, mix, and leave to cook until translucent. Add the turmeric powder mix and in goes the dhal. Mix well, and add the required amount of water. The dhal takes time to cook; just allow the dhal to soften. When the dhal is soft, add the basmati rice. Mix well, add the required amount of water, and leave to cook until the rice is cooked.

Note: There are many variations.

Example: The mushy kitchree pairs well with chutney. And this recipe pairs well with braised curries.
