What are aloo potatoes and masala?

Aloo, which means potato, and Masala, which basically means spices. It’s a delicious South Indian potato curry to serve with dosa, puri, roti, or naan. Additionally, this aloo masala filling can also be used for sandwiches, parathas, wraps, puff pastries, or packed in as a side dish for a lunchbox.

Although this is a traditional method, the potatoes are peeled, diced, and mixed with onions and spices, which is not time-consuming.

Today, I am sharing the stovetop version of making this easy potato masala recipe.

Potato Masala Recipe Ingredients.

  • Potato: I used UTD, soft cooking potatoes. You can also use red potatoes, or there are a variety.
  • Cumin seeds: Cumin seeds are an essential ingredient in Indian tempering, giving it a nice nutty flavor.
  • Curry leaves: I highly recommend adding these to get an authentic taste.
  • Onion: I have used red onions, which are thinly sliced lengthwise. You may also use yellow onions. The more, the better it gives to the dish.
  • Tomatoes: Diced
  • Spice : Kashmiri red chili powder
  • Turmeric: I always use organic turmeric for its medicinal properties and to add a beautiful yellow color to the dish.
  • Salt
  • Coriander leaves: for garnish

How do I marinate the potatoes?

  1. Prepare the potatoes.
    • Peel the potatoes and cut them into evenly sized cubes. Rinse them under cold water to remove excess starch.
  2. Prepare the Masala Marinade:
    • In a large mixing bowl with the potatoes. Combine Kashmiri red chili powder, turmeric powder, salt, sliced onion, and diced tomatoes.
  3. Marinate the potatoes.
    • Use your hands or a spoon to ensure that the potatoes are evenly coated with the marinade, cover, and set aside.

How do I cook potato curry?

  • Start by warming up some oil in a saucepan or a pot; once this is warm [do not overheat], add the cumin seeds and allow them to pop before adding some curry leaves.
  • Next, add the marinated masala potatoes to the oil. Mix well by incorporating the cumin seeds well into the potato mix.
  • Add some water to allow the potatoes to thoroughly cook.  Put a lid on the pan or the pot, and allow this to cook on a low to medium heat for about 10 minutes [or until the potatoes are tender through and through].
  • At this stage, the potatoes should be cooked (if they aren’t, cook until they are), so you can add some chopped cilantro (coriander) before serving!

Adjust the ingredients to the quantity of potatoes you will be using.

I served 12 adults with this delicious potato curry!
