Step 1: Once the above has been prepared, I put all of the above into the pressure cooker.

Step 2: Mash well; we want a soft texture, and set aside.

Step 3: We are ready to start braising the dhal.

Vegetable oil

Mustard seeds

Braising spice

1 diced onion

Red and green chilies

Turmeric powder

Curry leaves

Tamarind water

Salt

Butter ghee

Method.

In a deep pot, add the vegetable oil. Once the oil has heated up, add the mustard seed. Allow these seeds to splatter, then add the braising spice and sauté for a minute. Add the diced onions and salt, and mix well. As the onions brown lightly, add the chilies and curry leaves, together with the turmeric powder, and mix well. Now add the dhal and mix gently by adding the tamarind water. If the dhal is thick, add some boiled water and stir well. Allow the dhal to come to a boil with a good dollop of butter ghee. Mix gently and switch off the heat. Sprinkle with some chopped coriander leaves, and enjoy.
