Simple And Delicious Aloo Curry With Jalapenos

This is one of those dinners that may be prepared at a very low cost. But there is no tastier alternative. A little bit of oil, some green chili, some cumin seeds, some potatoes, some salt, and some mint leaves or cilantro are all you need. How much simpler could it possibly be?

Method

  • Warm enough oil to cover the quantity of potatoes you will be preparing.
  • Add cumin seeds to the heated oil.
  • Add sliced onions to the pot and the required amount of salt, and cook on medium to low heat until translucent.
  • Now add turmeric powder and stir.
  • Add the potatoes and give it a good mix.
  • Add some curry leaves and enough water to allow the potatoes to cook well on low heat.
  • Add the sliced jalapenos to the curry and stir.
  • When the curry is done, you may add the cilantro or mint leaves. Your simple and delicious potato curry is done.

It’s generally a good idea to choose waxy potatoes over starchy ones for curries, as waxy potatoes hold their shape better. However, personal preference plays a role, and some people may prefer the texture of starchy potatoes in certain curry recipes.

Worried your curry is watery?

  • In general, Indian curries can seem watery because the loose sauce is intended to saturate the rice.
  • If you would like to make your curry thicker, use full-fat coconut milk, as mentioned above, or reduce the amount of water.
  • To further reduce the liquid in a curry, let it simmer for longer over low heat.

STORAGE TIPS!

  • To Store. Refrigerate leftover curry in an airtight storage container for up to 4 days.
  • To Reheat. Rewarm leftovers on the stovetop over medium-low heat.
  • I would not recommend freezing this potato curry, as the potatoes can become mealy once thawed.
