Ingredients:
2 cups of all-purpose flour
1/2 tsp fine salt
1/2 tsp. carom seeds
3 tbsp. desi ghee
1/2 cup. room temperature water
Method:
To a dish, add the flour, fine salt, and carom seed. Using a whisk, combine all the ingredients. Now add the desi ghee and rub well into the flour mix. Gradually add water a little at a time, bringing the dough together. Knead well, cover, and set aside for 30 minutes.
Prepare the filling
To a bowl, add 2 tbsp all-purpose flour. Add water to form a paste. NOT TO THICK, NOR LIQUID. Set aside.
For the filling:
4 medium potatoes. Remove the skin, cube, and rinse well. Cook until tender and mash.
3 tbsp vegetable oil
1 tsp. cumin seeds
1 small onion, finely chopped
4 green chillies, finely chopped
1/2 tsp. turmeric powder
1 tsp. coriander seed powder
1 tsp. fine salt
Method:
To a pot, heat the oil and add the cumin seeds. Sauté and add the onions and chilies. Sauté and add the fine salt, turmeric powder, and coriander seed powder. Mix well and add the mashed potatoes. Now, combine really well and leave to cool.
Now we are ready to roll and fold the samosas. Enjoy!
