3 tbsp. roasted sesame seeds (rinse thoroughly and roast)
1 tsp. freshly crushed cardamom
2 tbsp. castor sugar
Condensed milk (adjust to requirements)
1 tbsp. eliachi syrup
Method:
Dry roast coconut on low heat for 15-20 minutes and set aside. Leave to cool completely. Add all the listed ingredients and combine well. Cover and leave aside.
For the poli puries:
3 cups all-purpose flour
150 g butter (room temperature)
Salt
2 tbsp sugar
1/2 tsp cardamom
Hot milk
Method:
Add all dry ingredients to a large bowl. Using a whisk to incorporate dry ingredients. Now add the butter and combine well. Bringing this mixture into a breadcrumb texture. Add the milk a little at a time and bring this into a soft dough. Cover and leave to rest for 30 minutes. Divide into equal portions and roll into a large roti. Cut into puris using a large cookie cutter. Using a teaspoon to incorporate filling. Press the edging of the poli. Using a fork or pinch, roll. Making sure poli’s are well sealed.
Frying:
In a deep pan. Heat oil on medium. Test oil by placing a small piece of dough. When it springs up, the oil is ready. Fry until golden in color. Use a fork to turn and a slotted spoon to remove and place in a colander.
