  • 7 Carrots
  • 1 onion, diced
  •  9 Green chilies
  • Mustard seeds
  • Vegetable oil
  • 1 Teaspoon salt
  • 3 Teaspoon sugar
  • 1 liter of full cream curd (I decided to make more carrot raita, and I also wanted a creamy texture). I made a cucumber raita with buttermilk, and it was delicious. Just explore in the kitchen.

How to make carrot raita?

Step 1: To prepare this recipe, scrape and rinse carrots, onions, and green chilies.  Now, grate the carrots, dice the onions, and slit green chilies.

Step 2: Heat oil in a pan over medium heat and add mustard seeds to it. When the seeds crackle, add the diced onion and mix. Allow the onion to become translucent, and add the green chilies. Saute for a minute or two, add the grated carrot, and mix well on low heat.

Step 3: Allow the grated carrot to wilt until it is semi-tender. Now remove the pot from the stove and leave it to cool completely.

Step 4: Season it with salt and sugar and mix. Incorporating all ingredients well and adding the creamy curd to get a good consistency. Leave in an airtight container, place in the refrigerator for 1 hour, and serve chilled. You can even garnish your Carrot Raita as per your taste and preference
