Ingredients
- 150g (1 ½ cups) cauliflower – cut into small pieces
- 250g carrot – cut into small pieces
- 250g green beans
- 1 1/4 finely sliced cabbage
- 100 g of fresh peas
- 6 freshly cleaned pickle onion
- 6 green chillies – thinly sliced
- 6 cloves garlic
- grape seed vinegar
- 3 tbsp pickle masala
- 1 tablespoon ground black mustard seeds
- 3 tbsp flaky sea salt
- 1 tsp cumin seeds
- 2 dried Kashmiri chillies – broken into three pieces each
- 10 curry leaves – finely chopped
- Rinse all the chopped vegetables and leave in a colander. allow water to drain out well.
- Now bring the veg into a large dish and pour in the grape vinegar and mix. Cover with a lid and leave aside for 8 to 10 hours.
- Remove lid and give the vegetable a good mix and leave aside for soaking in vinegar.
- After the required time, remove lid and drop vegetable into a colander and allow vinegar to drain out properly.
- Now use paper on the counter top or table and use muslin cloth on the paper. spread vegetable and allow to dry for another 10 to 12 hours.
- Gather up all veggies into a large dish
- Add all your ingredients, salt and sugar
- Mix really well, cover and set aside
- Now in a small pot, bring the oil to a bubble over high heat. Add the mustard seeds. When they begin to pop, reduce the temperature to medium high and stir in the cumin seeds, Kashmiri chillies and curry leaves. When these become fragrant, pour in the remaining oil, stir well and pour it all over the chopped vegetables.
- Mix really well. The vegetables should be submerged in the oil. If not, add a little more and then cover with cling film. In the summer months, you can place the the vegetable in pickle jars or airtight containers and keep in cool place or keep in the fridge.
- This delicious pickle will keep in the fridge for at least three months and 6 months in the refrigerator.
- Please be mindful, your containers seal well. When you want to use pickle from freezer, remove the pickle a day before.
- Make sure that the vegetables are always covered in oil to avoid it going off.
