Flavourful Mutton Mince Cooked with White Eggplant

Welcome back to my kitchen, friends! You know I’m all about stretching humble ingredients into unforgettable meals, and today’s recipe does just that. We start with richly seasoned mutton mince—fragrant spicesthen let it simmer down with creamy white eggplant until everything melts into a thick, savory cuddle. The result? A spoon-and-rice kind of comfort that reminds me of Sunday lunches in my South African-Indian home, where spices danced in the air and every pot told a story. Grab your wooden spoon, switch on that stove, and let’s turn simple staples into a dish your family will rave about long after the last bite!

1 kg mutton mince. Rinse and leave in a colander.

Ingredients:
Vegetable oil
1 cinnamon stick
1 black cardamom
1 star anise
8 to 10 peppercorns
1 large onion, sliced
Salt
2 tbsp. Kashmiri chili powder
1 tbsp. biryani mix
1 tbsp. coriander seed powder
1/2 tsp. turmeric powder
Ground ginger and garlic paste
White eggplants
Curry leaves
Chopped cilantro
Method:
Heat the oil and add the whole spices. Sauté and add the sliced onions and mix. Add the salt and cook until translucent. Now add all the spices and sauté for 2 to 3 minutes on low heat. Add the ginger and garlic paste, sauté for another 1 or 2, and add the mince. Mix really well, put on the lid, and cook for 8 to 10 minutes. Now add the eggplants and cook on low heat until all liquids have evaporated and the oil has surfaced. Sprinkle some chopped coriander and enjoy!
Note: Do not mix the curry. Very gently shift the curry so the eggplants are whole.
