3 tbsp. kashmiri red chili powder
1/2 tbsp. turmeric powder
1 tbsp. garam masala (homemade)
1 tbsp. ground cumin
2 tbsp. ground ginger and garlic
Method:
To a large flat pot, add the oil on medium heat. Add the whole spices and sliced onions. Add the salt and cook until translucent. Add the ground ginger and garlic. Sauté on low heat, add all the dry spices, and combine well. Add the mutton from the colander, mixing really well. Cook on medium heat. Check in to add water.
Cook until the meat is 60% done. Now add the chunky cabbage. Do not stir; just leave the cabbage to wilt. When the cabbage has wilted, give the curry a good mix, incorporating it well. Leave the lid half open. Once the oil surfaces, garnish with chopped coriander leaves.
