Chicken biryani is my family’s favorite Indian rice dish, and for a good reason! It’s a comforting and delicious one-pot meal with fall-apart tender chicken, fluffy long-grain basmati rice, and sweet caramelized onions (you can’t go wrong with that combination, right?). My family loves it with a side of sour milk salad with cucumbers or a simple salad!

Cooking the Biryani

Yes, I will admit that cooking this chicken masala biryani is a bit of a process. Like any Biryani, I suppose. Some people do feel intimidated by the thought of cooking biryani.

But it can be easy if you prepare in advance.  I usually marinate my chicken with spices overnight. Doing this also speeds up the process a little when you’re ready to cook.

Also, with practice, cooking a biryani becomes much easier. Although I prefer popping my biryani in the oven, you can totally cook it on the stovetop.

You have to remember to cook it on a very low heat and constantly check on it. The moisture on the stovetop does dry up quicker than in the oven, so it can burn if you don’t keep a close eye on it.

Why will this become your ‘go-to’ One Pot Biryani?

It’s a complete, one-pot meal! Traditionally, biryani is a complex recipe with multiple steps (and dishes) involved. In this simplified and easy recipe for one pot of chicken biryani, I show you how to create authentic biryani flavors using just a pot, all in the same pot.
