For this recipe, we’ll blend the rehydrated chunks in a food processor until they form small crumbles. Alternatively, you can use soya granules, which are available in dry crumble form. If using granules, simply soak them for 15-20 minutes, and they’re ready to use.
Flavouring
The flavouring options are endless. I kept it very simple in this recipe. A pinch of ground spices can really elevate the flavor profile. Add herbs of your choice. Spring greens, parsley, cilantro or chives goes well.
Quick notes for making soya chunk burger patties:
- I normally make a large batch on weekends and freeze them for up to 2 weeks. They have never lasted more than 2 weeks in my family, so just can’t comment if they freeze well longer than that. As a general rule, I don’t freeze food items for longer periods.
- The quickest method to prep potatoes is either boiling in a pressure cooker or microwave. I choose to microwave my potatoes. Don’t forget to make some shallow incisions on the ends of potatoes in order to avoid them from bursting in the microwave.
- I believe it is always better to make a small batch when trying something new. If satisfied with the results, one can always scale it. So, like always, this is also a small-volume recipe. Do give it a try.
