Fresh And Delicious Healthy Moringa

The wonder plant called Moringa and its many health benefits. Moringa is also defined as a superfood, as it contains not only plenty of nutrients but phytonutrients as well. Not only does it have antidiabetic properties, which can lower sugar levels in the human body, but it also has anti-inflammatory properties and also fights against acne.

One of the numerous rules that I establish (and sometimes break), and one that I have been quite consistent in adhering to, is the one that requires me to include a meal that is based on leafy greens every two to three days. Your goal should be to consume greens on a daily basis. To tell you the truth, I am not quite there yet, but I am a lot better than I was before.

Ingredients

  • Moringa (drumstick) leaves (required amount)
  • 1/4 teaspoon turmeric powder (optional)
  • 1/4 cup grated coconut (optional)
  • to taste salt
  • 1 tablespoon oil (required amount)
  • 1/2 teaspoon mustard seeds (optional)
  • 2 large onions, sliced
  • 1 tablespoon crushed dry chillies (required amount)

Instructions

Pluck drumstick leaves from stems and rinse well 4-5 times in water. Leave moringa leaves in a colander. And get rid of all the thick sprigs.

Method

  • When the oil in a pan is hot, add the chopped onions and a generous amount of garlic.
  • After the onions are cooked to tender and translucent, add dry chillies and curry leaves (optional; I didn’t use them).
  • Saute for a couple of minutes on medium-to-low heat.
  • Now add the washed moringa leaves and mix well.
  • Cook with the lid closed for 8 to 10 minutes. Add salt if required. Stir occasionally.
  • Open the lid, stir well, and cook for 2 minutes.
  • Switch off.
  • Serve the curry with some hot rice or bread.
