It is often known that Durban is the city where the fun never stops. The warm waters of the Indian Ocean lap against stunning beaches, contemporary retail centers, fantastic clubs, restaurants, and bars, and athletic facilities of internationally renowned caliber. We are fortunate to have a lovely mix of folks who come from a variety of different backgrounds.
While it is true that Durban is the city where the party never stops, it is also the place that is the most well-known on the planet when it comes to our respective curries. The Durban Mutton Curry is, without a shadow of a doubt, the most well-known of all the dishes. In addition to being served as traditional bunny chow, you may also enjoy delicious curry with rice and all of the seasonings.
This simple recipe for mutton curry is a little bit unusual. This dish is one of my favorites since it involves very little preparation, is made using straightforward, commonplace ingredients, and can be prepared in less than an hour. This means that the mutton curry can now be prepared in double the amount of time it took before without sacrificing any of its delicious flavor! The end product is a mutton curry that is rich in flavor, and I am using these incredible Kashmiri spices.
Ingredients
- 1 kg mutton cut into pieces
- Vegetable oil
- Star anise
- Cinnamon sticks
- 1 large onion, sliced
- 2 medium tomatoes
- Curry leaves
- 1 tablespoon of ground ginger & garlic
- Salt
- 3 tablespoons of Kashmiri chili powder
- 1 tablespoon of turmeric
- 1 tablespoon biryani spice
- 1 tablespoon garum masala
- 1 tablespoon coriander powder
- 5 medium potatoes, cut into halves
- Freshly chopped coriander (dhania)
- Add water according to how you like the consistency of the gravy.
Method
- Heat oil, add whole-spice, and sauté for a minute. Add sliced onion with some curry leaves and mix. Add the required amount of salt for the curry and cook on medium-low until the onion becomes translucent.
- Add the chopped tomato with some curry leaves, and add the ginger and garlic paste. Mix well and allow to cook until tender.
- Add all the dry ingredients, mix well, and allow to simmer on low heat for 3 to 4 minutes.
- Now add the mutton, giving the curry a good mix and incorporating the spice mix into the meat.
- Turn down the heat, cover the pot, and leave to braise.
- Cook until the meat begins to fry up, and add enough water to cook the mutton. Turn up the heat to medium.
- When the mutton is partially cooked, add the potatoes and water (if necessary).
- Bring to a boil, then turn down the heat to medium-low.
- Cook until meat is tender & potatoes are soft
- Garnish with chopped coriander.

How do I refrigerate this curry?
FAQS!
Can I use other types of meat instead of mutton for this curry?
Absolutely! While mutton adds a distinctive flavor to the dish, you can easily substitute it with lamb, beef, chicken, or even tofu for a vegetarian option.
How long does it take to cook the mutton until it’s tender?
Cooking times can vary depending on the cut of meat and your cooking method. Generally, mutton requires slow cooking for tenderness, which can take anywhere from 1.5 to 3 hours on the stovetop or in a slow cooker.
Can I adjust the spice level of the curry to suit my taste preferences?
Yes! Feel free to adjust the amount of chili powder, fresh chilies, or other spices according to your desired level of heat. If you are using chilies, you can also remove the seeds (pips) from the chilies for a milder flavor.
Are there any alternative ingredients I can use if I don’t have potatoes to soak in the gravy?
While potatoes add a unique texture and flavor to the curry, you can substitute them with sweet potatoes.
Can I prepare this curry ahead of time?
Absolutely! In fact, many people find that the flavors of the curry develop even further when allowed to sit for a few hours or overnight. Simply reheat gently before serving, and you’ll have a delicious meal ready in no time.
