Simple and Delicious Croquettes

500g chicken mince. Rinse, leave in a colander covered.

Peel and boil 4 medium potatoes until fork tender. Drain off the water completely and mash the potatoes.
Ingredients:
1 small purple onion, finely chopped
5 medium green chillies, finely sliced
1 medium carrot, grated and set aside.
1 tsp. ground black pepper
1 heaped tsp. garlic powder
1 tsp. fine salt
3 tbsp. corn flour
2 large eggs
1 and 1/2 cup grated gouda cheese, or cheese of your choice
Method:
To a dish, add the chicken mince, mashed potatoes, and all the ingredients listed above. Mix really well, incorporating all ingredients, cover, and set aside.
Let’s prepare the breading:
 
1/2 cup all-purpose flour
3/4 cup of room temperature water
Using a whisk, make sure there are no lumps.
 
2 cups of breadcrumbs ( unflavoured and no spices to the crumbs)
Method:
To a pan, we are going to shallow fry. Test oil with the back of a wooden spoon. You will see bubbels.
Scoop the mixture into the palm of your hand and roll into a ball flattened.
Dip into the flour slurry and coat into the breadcrumbs.
When the oil is ready, start by placing the croquettes into the oil and cook on medium to low for 5 to 7 minutes on each side, turning twice. Use a slotted spoon to remove from oil and place on a rack.
Remove from the rack and place in a container using an absorbent paper towel.
Remember, chicken is in its raw form. Be patient when frying. 
Crispy on the outside and tender on the inside. 

 

How to shallow fry croquettes!

Prepare the croquettes:

Ensure the croquettes are well-coated with breadcrumbs or batter to prevent sticking.

Add the croquettes to the pan. Carefully place the croquettes into the hot oil using tongs or a spoon. Avoid overcrowding the pan to ensure even cooking.

Fry until golden brown:

Cook each side for 2-3 minutes or until golden brown.

Use tongs or a spatula to gently turn them over.

Drain the excess oil: Remove the croquettes and place them on a plate lined with paper towels to absorb any excess oil.

Serve Hot: Serve immediately with your favorite dip or sauce.

Tips:

  • Keep the heat consistent to prevent the croquettes from burning or absorbing too much oil.
  • If frying in batches, let the oil reheat slightly between batches.
  • Use a splatter guard to minimize mess.
