Both simple to prepare and a pleasure to consume! It has always seemed to me that it is a great shame that hake is not a more popular fish, despite the fact that it is wonderful, flaky, and juicy. On account of the fact that it is so underappreciated, it might be pretty challenging to locate at times. As a result, I was feeling very delighted when I discovered a large bag of frozen haddock medallions not too long ago. These medallions, of course, made their way to our freezer at home.

How will I know if the haddock is fresh?

Fresh haddock should have a firm and moist texture with a translucent appearance and a glistening sheen. The flesh should be free from discoloration, bruises, or any off-putting odors.

Next, assess the smell. Fresh hake should have a clean, oceanic scent, devoid of any ammonia-like or fishy odor.

When purchasing haddock medallions, buy from reputable fishmongers or markets known for their high-quality seafood. Always check for proper storage conditions, such as a cold and clean display. Ingredients

1 large onion, sliced
10 tomatoes pureed
Few chillies
Curry leaves
1 tsp. sugar
1 tsp. ginger and garlic paste
Salt to taste
Oil
2 tsp. Kashmiri chili powder
1 tsp. turmeric powder

Method

  1. Add the required oil to the pot.
  2. Add the sliced onion to the pot and give it a mix. Add salt to the onion and allow it to fry until translucent.
    Add the chilies and curry leaves and give it a mix.
  3. Add the kashmiri chili powder and turmeric powder.
  4. Add the pureed tomatoes to the pot and mix.
    Add ginger and garlic paste and mix
  5. Allow the liquid from the pureed tomatoes to dry properly.
    Add the haddock and simmer over low heat. Once the chutney is done, it will be thick and oily.

I used an Amc pot to cook this meal. Once cooked, remove it from the stove and put it in a casserole dish with a lid, because the Amc pot retains heat and will dry up the chutney.

Garnish with fresh spring onions and coriander.
