Let’s dive in and create something delicious together!

3  Large sweet potatoes. Peel and cut into cubes. Rinse thoroughly and cook until tender. Remove the liquid to a dish and mash the sweet potatoes separately, making sure the mashing is done properly. Cover and set aside. We will be using the liquid from the boiled sweet potato.

Ingredients:
8 cups of all-purpose flour
2 tbsp. fine salt
2 tbsp. baking powder
3 tbsp. desi ghee
Method:
Using a whisk. Incorporate the above ingredients and add the ghee. Combine the ghee really well. Add the mashed sweet potato. Mixing really well. Now, I needed some liquid to make a soft dough. Add the liquid from the sweet potato and bring the dough together. Knead well. Sprinkle a little oil on the dough. Cover and set aside for 30 minutes. Divide the dough into smaller portions. Roll into a log and cut into the size required. Shape into dough balls and roll out roti’s. Now we are ready to fry our sweet potato roti’s and enjoy!
For frying the roti’s. You will need butter or margarine and oil. Ratio of half and half for brushing the roti’s
