  • 4 cloves of garlic
  • 1 teaspoon sugar
  • Scallions
  • Coriander
  • Vegetable oil

  1. Begin by rinsing the hake medallions and placing them in a colander for 15 minutes. Remove the hake from the colander and place it in a shallow dish for marinating.
  2. Add the kashmiri chili powder, chaat masala, turmeric powder, garam masala, coriander powder, salt, ginger, and garlic.
  3. Gently coat each hake medallion, ensuring an even distribution of flavors.

Method:

Heat oil in the pan. Add the marinated hake to the pan and fry until crisp on both sides. Remove and place in a pot and cover.

Now add the sliced onions to the oil used for frying hake. Allow the onions to become translucent. Add slit green chilies and mix. Now add the pureed tomato and stir well. While cooking on medium heat, add sugar and mix. The sugar just enhances the flavour.  Sprinkle crushed garlic and leave to simmer. Allow the liquid to evaporate. When the oil settles on the surface, the curry is ready. Evenly add the curry to the fried hake and garnish with scallions and coriander. Remove from heat.
